Silver 7132 - Fine Dining in the Swiss Alps

People travel to the little mountain village of Vals deep in the Alps of Switzerland for the thermal baths: 7132 Therme & Spa designed by famed Swiss architect Peter Zumthor. But to that you should add another reason to visit: Sven Wassmer and his two Michelin stars and 18 Gault&Millau points that he and his team are showing off in the Silver, the restaurant of the thermal baths hotel 7132.

Ambience

The hotel lobby and restaurant were tastefully decorated for the upcoming Christmas festivities.

The Menu

I opted for the 9 course degustation menu with wine journey.

Amuse-bouche

This multi-course amuse-bouche was delivered by different members of the kitchen team, which was a nice touch.

The best butter you are ever gonna have. Retrieved every morning from a local farmer, never a day old, it tastes how nature intended (an I usually don't like butter).

Digestif

The outdoor fumoir had a cosy fireplace, unfortunately the walls didn't hold the cold back. It must be nicer on an alpine summer night.

Verdict Perfection. No dish disappointed here. The fantastic wine journey with a lot of excellent Swiss wines and the warm and friendly service topped it all off. For me it's rather gold than silver.
